南瓜凍

食材 (4 人份)
材料
南瓜(去皮之後)300g
砂糖60g
牛奶200ml
鮮奶油200ml
香草精數滴
吉利丁粉6-7g
水45mL

[b]作法[/b]
1 吉利丁粉倒入水中放置15-20分鐘後.隔熱水讓它溶解
(吉利丁粉溶解的溫度在60-80度,超過80度後將會產生臭味,且破壞凝結度)

2 南瓜去皮蒸熟之後取300g用果汁機打成泥狀.

3 加入砂糖打勻.

4 再將牛奶和鮮奶油和香草精也加入攪拌均勻.

5 再將南瓜泥過濾後將吉利丁倒入快速拌勻.

6 最後再倒入杯模中.放入冰箱讓它凝固即可.

7 p.s'口感的軟硬度也可自行調整.想再軟一點可用5-6g.硬一點就是7g
